Mediterranean Sunday brunch launched at Waterfall Café
The brunch will be available starting 30 September.
In a release, On 30 September 2012, Waterfall Café will launch a healthy yet creative Sunday brunch inspired by Mediterranean flavours. In line with Chef de Cuisine Stephane Cocu’s culinary philosophy, the menu is a showcase of fresh seasonal produce.
Unlimited servings of appetisers and seafood on ice are available from the homely kitchen counters while a choice of breakfast dishes and à la carte main courses complete the Sunday feast. Each table will be presented with a decadent dessert platter to end the Sunday Brunch experience at Waterfall Café.
Wine lovers will enjoy the Mediterranean journey with six distinctive wines from Italy, Spain, Portugal and France. Sunday brunch is priced at S$78 per adult with one bottle of organic soda or S$116 per adult with free-flowing wine.
Diners can begin with the appetiser buffet of salads, cold cuts, soups served in tasteful portions as well as the seafood highlights such as Alaskan king crab and poached prawns on ice. Chef Stephane’s Mediterranean influence is evident in creations such as Italian Orzo Pasta Salad and French Toasted Poliâne Bread with Olive Oil topped with Joselito Jamon.
The main courses are a reflection of individuality and personal taste. Diners can indulge without guilt, by choosing a hot breakfast item and à la carte main courses, since all meat and seafood are sustainably sourced. For instance, the Hokkaido scallops are of premium sashimi grade, hormone free and antibiotic free.
Freshly caught from the ocean, the scallops are frozen immediately to seal in the freshness. Similarly, Waterfall Café offers premium rib-eye that is hormone free and antibiotic free, as the meat comes from grain-fed cattle that roam freely to graze on the lush pastures of New Zealand.
The sustainable produce coupled with Chef Stephane’s mastery in blending herbs, smoked salts, vinegars and exotic spices accentuate the natural goodness of the dishes.
